Medium
Ingredients
Sour star fruit 1 piece
Small banana blossom 1 piece
Vegetarian noodles 100 g
Ready-fried tofu 2 block
Carrot 1 piece
Roasted peanuts, coarsely crushed 100 g
Cucumber 1 piece
Wood ear mushrooms 50 g
Implementation Steps
01
Soak the wood ear mushrooms in cold water until they swell, then lift them out, trim off the hard bases, wash thoroughly, drain and slice finely. Fry the tofu again until golden and crisp, then cut into thin strips. Remove the tough outer leaves of the banana blossom, shred it and soak in cold water with a little vinegar for about 20 minutes. This draws out the sap and stops it from discolouring. Then rinse it thoroughly and drain well.
02
Wash and peel the carrot, grate it into strips, then mix with a little sugared vinegar and half a teaspoon of salt and leave to marinate for 20 minutes. Then squeeze out all the liquid by hand. Wash the star fruit and cut into thin strips. If you don't like it too sour, squeeze out some of the star fruit juice. Soak the cucumber in lightly salted water, then wash, peel and cut into thin strips too.

03
Heat 2 tablespoons of oil in a pan, add the wood ear mushrooms and stir-fry until cooked.
04
Loosen the vegetarian noodles with your hands, then blanch them in hot water. Heat another 2 tablespoons of oil in the pan and fry the noodles until golden.
05
Mix 3 tablespoons soy sauce with 1 tablespoon water, add the finely chopped pineapple, stir well and season with sugar and MSG to taste.
06
Arrange the star fruit, cucumber, carrot, wood ear mushrooms, banana blossom and tofu in a bowl, put the fried noodles in the centre, sprinkle the roasted peanuts on top, toss with the soy sauce dressing and enjoy.
