Easy
Ingredients
Water spinach (morning glory) 300 g
Garlic 1 bulb
Sugar 1 tablespoon
Sawtooth coriander 50 g
Roasted peanuts 10 g
Chilli 2 pieces
Mint 50 g
Lime 1 pieces
Vegetarian fish sauce 3 tablespoon
Vietnamese balm (kinh gioi) 1 a little
Implementation Steps
01
- Pick the leaves off the water spinach, wash and drain.
- Bring a pot of water to a boil, add the water spinach and cook until tender, then lift it out into a colander to drain. For extra crunch, transfer it to a bowl of ice water instead.
- Roast the peanuts, remove the skins and crush them.
- Wash the herbs (mint, sawtooth coriander, Vietnamese balm) and chop them finely.
02
How to make the salad dressing:
- Crush and finely mince the garlic, seed and finely chop the chilli, and squeeze the lime for its juice.
- Combine 3 tablespoons vegetarian fish sauce, 1 tablespoon water and 1 tablespoon sugar, stir until dissolved, then add the lime juice and mix well (if you want the garlic and chilli to float on top of the dressing, add the lime juice first, stir, and add the garlic and chilli last). Finally, add the garlic and chilli.
03
Put the boiled water spinach in a large bowl, add the chopped herbs and roasted peanuts, pour over the dressing, toss well and enjoy.
