King oyster mushrooms 200 g
Ginger 15 g
Shallots 15 g
Chili 20 g
Garlic 25 g
Implementation Steps
01
Prepare the ingredients
Wash the king oyster mushrooms and slice lengthwise about 4–5 mm thick. Clean the chili, shallots, garlic and ginger and slice thinly.
02
Cook the soy sauce and mushrooms
Put 200 g soy sauce, 400 g water, 3 tablespoons sugar and ½ tablespoon salt in a pot and simmer over medium heat for 5 minutes.

Add the mushrooms and cook for another 1–2 minutes until done, then turn off the heat. Finally, remove the lid and let the mixture cool completely.
03
Fry the tofu
Heat 4 tablespoons cooking oil in a pan. When the oil is hot, add the tofu pieces and fry until golden on all sides, then turn off the heat, lift out and drain.
04
Marinate the tofu
Arrange the tofu in a glass jar and scatter the sliced garlic, shallots, ginger and chili on top.

Pour the soy sauce and mushroom mixture into the jar, add a few black peppercorns, close the lid and keep in the fridge for 8–12 hours.
05
The finished dish
The finished soy-marinated tofu has a delicate aroma and a lovely colour. The neat, soft, wobbly cubes of tofu look irresistible.
