Ingredients
tiger prawns 500 g
salted eggs 4 pieces
tapioca starch 15 g
Implementation Steps
01
Prepare the shrimp
Clean the shrimp in lightly salted water, then rinse with fresh water. Use scissors to cut off the heads and legs and remove the stomach sac from the head. Then make a slit along the back and pull out the vein.

Lay a paper towel down, place the shrimp on top and cover with another 2 or 3 sheets of paper towel. Press gently to soak up any water left in the shrimp. Put the shrimp in a large bowl, add 1.25g of salt and a little pepper and toss so the seasoning coats the shrimp. Then add the tapioca starch and toss again.
02
Steam the salted egg yolks
Crack the salted eggs, keep only the yolks and rinse them with water. Pour some rice wine into a spray bottle and mist it evenly over the yolks to remove any fishy smell. Place the yolks in a steamer and steam over high heat for about 15 minutes. When they are done, take the yolks out and mash them with a fork.
03
Fry the shrimp
Heat a pan, add cooking oil and turn the heat to high. When the oil is hot, add the shrimp, stir them around with chopsticks and fry for 2-3 minutes. Once the shrimp turn a lovely orange, lift them out and drain off the oil.
04
Make the salted egg sauce and coat the shrimp
Turn the heat to low and add 15g of butter. When the butter has melted, add the mashed salted egg yolks, along with 15ml of water to help them melt. Add 15ml of mayonnaise, 5g of sugar and 2.5g of chicken stock powder one at a time and stir well. Add the shrimp and toss until they are evenly coated in the sauce, then turn off the heat.
05
The finished dish
The shrimp are coated in a hot, golden layer of salted egg sauce with a subtle, irresistible aroma. What are you waiting for? Plate it up and enjoy it with your loved ones right away!
