Make the mousse base
Put a small pot with the blended pomelo juice over medium heat and add 70 g of sugar. Stir well and cook until the mixture takes on an appealing colour and starts to thicken. Then add 5 ml of lemon juice, stir again and turn off the heat.
In a large bowl, mix 35 g of cream cheese, 50 ml of yogurt, 30 g of sugar and 1 teaspoon of vanilla.
Next, add 100 ml of the blended pomelo juice and stir in 5 g of gelatin (melted over a water bath). Then pour in 50 ml of whipping cream and stir again.
Pour the mousse mixture into the mould, smooth the top and chill in the fridge for about 4 hours until set.

Make the pomelo glaze
Put 50 ml of blended pomelo juice, 50 ml of corn syrup and 25 g of sugar in a small pot over low heat. Stir until the sugar has completely dissolved and the mixture has a lovely colour. Then turn off the heat and strain the mixture through a sieve to get a clear syrup.
Soak a 4 g sheet of gelatin in water until soft, squeeze out the excess water, then add it to the strained pomelo syrup. Stir with a spoon until the gelatin has completely dissolved.
Next, add 35 ml of whipping cream and stir well. Dip a toothpick in red food colouring and stir a touch into the mixture.
Finally, add 50 g of melted white chocolate and stir until smooth and evenly combined.

Finish
Take the moulds out of the fridge and carefully unmould the mousses one by one so they don't break. Place them on a clean wire rack, then pour the pomelo glaze evenly over the top. Any excess glaze will run off underneath the rack.
Finally, take rounds of sponge cake cut to the same size as the mousses. Place them on a plate, then set a mousse on top of each. Spoon a little pomelo syrup into the centre and sprinkle a little pomelo flesh on top to decorate.
