Ingredients
Snakehead fish 1 whole
Pineapple 1 piece
Spring onions 2 stalk
Seasoning powder 1 tablespoon
Shallots 2 piece
Soy sauce 3 tablespoon
Cooking oil 3 tablespoon
Sugar 2 tablespoon
Implementation Steps
01
Clean the snakehead fish thoroughly, removing all the slime. Cut it into even round steaks.
When you buy the pineapple at the market, get one the seller has already peeled – it's much more convenient. Cut it into small bite-sized pieces as usual.

02
Get a bowl ready to marinate the fish.
Wash and finely chop the shallots, then mix them with 1 tablespoon of seasoning powder and 1 tablespoon of pepper and marinate the fish in this for about 20 minutes so it absorbs the flavour.
03
Get the braising pot ready.
Put the pot on the stove and add 1 tablespoon of white sugar. Wait until it bubbles and turns into a golden caramel, then add the fish. Turn it on both sides so the flesh firms up.
Next, add 3 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of seasoning powder and 100 ml of cold water to the pot.
04
Once the mixture comes to the boil, lower the heat a little. Simmer until the liquid has partly reduced, then add the pineapple. When the fish has turned brown, you can turn off the heat.
Snakehead fish braised with pineapple is wonderfully fragrant, and on a cold day, enjoyed with steamed rice, it really warms you up.
Good luck!
