Ingredients
Pork spare ribs 400 g
Tomatoes 2 piece
Shallots 1 piece
Spring onions 2 stalk
Implementation Steps
01
Wash the ribs, pat dry and chop into bite-sized pieces. Bring a moderate amount of water to the boil in a pot, blanch the ribs briefly, then lift out and rinse clean.
02
Put the ribs in a bowl with a little salt, fish sauce, seasoning powder and pepper, toss well and marinate for 20 minutes.
03
Wash the tomatoes, remove the stems and cut into small pieces. Finely mince the shallots and garlic, and finely chop the spring onions.
04
Heat 2-3 spoonfuls of oil in a pan, then add the ribs and fry briefly until both sides are lightly browned. Lift them out onto a plate.
05
Pour off any excess oil, leaving about 1 spoonful in the pan. Fry the minced shallots and garlic until fragrant, then add the tomatoes and stir-fry until soft. Add the ribs.
06
Add sugar to balance the sweet and sour flavor, then a little water, and cook until the ribs are tender and the sauce is thick. Turn off the heat, sprinkle with chopped spring onions and spoon onto a plate. Wonderful with hot steamed rice.
